Apple Glazed Carrots
- 1 tbsp butter
- 16 ozs baby carrots
- 1 c apple cider
- 1 tsp honey
- 1 tbsp minced green onion
Melt butter in non-stick skillet over medium-high heat. Add carrots
and saute until carrots begin to brown slightly, about 8 minutes.
Add apple juice and honey and bring to boil. Reduce heat and simmer
until carrots are tender and liquid is reduced to glaze, stirring
occasionally, about 15 minutes. Transfer to bowl. Sprinkle with green
onion tops and serve. Serving Size : 4
Per serving: 105 Calories; 3g Fat (25% calories from
fat); 1g Protein; 19g Carbohydrate; 8mg Cholesterol; 79mg Sodium
Colorful Baked Vegetables
- 2 large potatoes, peeled and sliced
- 1 red sweet pepper, sliced
- 4 carrots, peeled and sliced
- 1 head broccoli, cut into bite-sized pieces
- 4 medium zucchini, sliced
- 1/2 tsp. salt
- 3 tbsp. olive oil
- Herbs, fresh or dry (rosemary, oregano, thyme)
Preheat oven to 400º F (205º C). Lightly grease a large
baking dish. Combine vegetables in prepared baking dish, and lightly
salt. Brush with olive oil until well coated. Sprinkle with herbs
as desired. Bake for 30 to 45 minutes or until vegetables are tender.
Yield: 8 serving
