Easy Meatballs

• 1 lb lean ground beef
• 1 egg
• 2 tablespoons water
• 1/2 cup breadcrumbs
• 1/4 cup minced onions
• 1/2 teaspoon salt
• 1/8 teaspoon pepper

1 (lb) batch Change size or US/metric
Change to: (lb) batch US Metric 45 minutes 15 mins prep

1. Preheat oven to 350ºF.
2. In large bowl combine egg, water, bread crumbs, onion, salt and pepper and combine. Add ground beef, broken into chunks, and mush with your hands to combine.
3. Form into meatballs about 1" in diameter and place on a broiler pan.
4. Bake for 25-30 minutes until meatballs are no longer pink in center.
5. Cool and freeze, or use in your favorite meatball recipe.

This cake is baked in a 13 x 9-inch pan, there is enough delicious icing to cover the cake completely.
2 large ripe bananas

• 1/2 cup sour cream
• 4 large eggs
• 1 tablespoon grated orange zest
• 1 tablespoon vanilla
• 4 cups cake flour or pastry flour
• 1 1/2 cups sugar
• 5 teaspoons baking powder (yes 5 teaspoons!)
• 1 teaspoon baking soda
• 1 teaspoon salt
• 1 cup butter, softened
• 1 cup chocolate chips

ICING

• 1 cup butter
• 5 cups icing sugar
• 2/3 cup whipping cream
• 1 teaspoon white vanilla (or use dark vanilla)
• food coloring (optional)
